DOC&AG… "Designation of Origin Controlled & Authenticity Guaranteed" Wild Coyote is proud to be one of the first wineries in the USA to adopt the European DOCG model, which sets guidelines for the strictest vineyard/winery production practices. We even redefine it as DOC&AG; All the grapes grown & winemaking MUST be a single site and under one person's control, low production yields (2-3 tons/ac), dry farmed, hand harvested, high sugar contents (above 25 brix), over 95% pure varietals, sorted & crushed delicately (1-2 tons/hr), oak barrel aged (min.18-mo), and non-filtered.

If you like the true taste of Paso fruit, then Wild Coyote can deliver exactly that. Our wines are close to 100% pure varietals, as compared to most other wines which are only about 80% accurate, so it can legally be called varietal. Let’s face it, the other 20% can be any varietals which is not called out on the label, then the consumers really don’t know what is real.
Also, we are not too shy in producing higher alcohol wines (14-16 brix) as he believes the wines under 14% are done mostly on purpose to pay less taxes and appeal to the masses. “We will not compromise the quality of the fruit that can produce world class wines, just so that we can save a few bucks.”

WINE VARIETALS & CHARACTERISTICS

 

Zinfandel
Our Westside estate Zin at first impression has a bit of spice, very fruity, and medium to dark garnet red color with intense rich texture. Then followed by a wealth of flavors from soft plum/raspberry and aromas from the barrel aging that reaches a nice balance with the tannins at the end of the mouth.

Syrah
Our Westside estate Syrah is truly a unique variety, since we use both French & Australian clones. Deep dark garnets in color with intriguing fragrant aromas of classic blueberry, earth aromas with sweet oak, pepper and spice. Forward fruit and layers of supple round tannins contribute to a firm structure and extended rich finish.

Merlot
Our Westside estate Merlot delights the eye with a deep ruby-red color and the bouquet is full nose of fruit and a delicate oak balance without masking the flavors of this wonderful grape. Very smooth, traditional style and the bright tannins are very ripe and big which provide a long smooth finish.

Tempranillo
Our Westside estate Tempranillo is medium to full-bodied, low acidity, full fruit characteristic of plum, cherry & strawberry with an earthy minerality. Perfect for food pairing with its hometown favorites - tapas, pork, grilled or roasted entrees..

Meritage (House-Of-Reds)
This is a perfect blend of our three Westside estate grapes; Syrah, Merlot, and Zinfandel. We take the best of each varietal grapes that we grow (percentages change every year) and create this one-of-a-kind magnificent wine. Since our big reds have done so well for us, we just couldn’t wait to marry them all and see the results. If we may say so, it is very impressive… You can almost detect the different varietals, but with a sensational and unique finish, unlike any others.

Rose’ of …
Although we are known for our big reds, but we just could not resist making a Rose’. And, to follow our tradition of making big reds, this Rose’ is also made in a big style (not sweet or wimpy). It is usually made from one of our estate varietals, which seems to be an ideal match. It is a dry Rose, but with a perfect balance, and a creamy finish. With a name like “White Owl”, it will for sure capture your palate & imagination.

Zinfandel/Port
This Zinfandel/Port was dedicated to my wife Kati (tribal name Little Fawn). It is made from our Estate Zinfandel, with only 125 cases produced per year. Everything is handmade, including the bottles, which was from one of the oldest glass molds (it was actually archived) by an Italian manufacturer. It is fortified with Brandy (18%alc), with an amazing sweet chocolate after-taste which is very heavenly. As one of the customers said it best. . ."it is to kill for."

Late-Harvest Syrah
This Late-Harvest is made from our Estate Syrah grapes, with only 125 cases produced per year. It is named as Dream Catcher, which is a perfect therapy for after dinner and before sleep. The winemaking process is the same as the Port, except this one doesn’t get fortified with Brandy. All the sweets are natural from the grapes, with 15.6% alc. Not overly sweet, with a perfect balance and an amazing finish.
